This impressive 100% Chardonnay has been manually harvested and pressed on a pneumatic press at a low pressure, subjected to alcoholic and malolactic fermentation in casks over a period of 3 months to better extract the aromas, followed by maturation for 10 months in French oak barrels. Here are the winemaker’s comments:
“Nice yellow-gold robe with grey tints, brilliant and clear. Open and pleasant aromas of fresh fruit, white flowers and marzipan (!). A touch of chestnuts and butter on the second nose. Nice and elegant toasted bread aromas. Clean attack, fresh, fat, full and rich, well-structured, good balance between acidity and mellowness, harmonious and long lasting on “marron glace” flavor.
